Hi all. I mentioned in my most recent competition wins blog post that I was super lucky enough to win a cupcake decorating class. But not just any cupcake decorating class, a class with my most favourite and inspirational cake maker.. Carina of Carinas Cupcakes! If you haven’t already heard of her, she creates the most fantastic, original, and detailed cakes. Check out her Facebook page, she has almost 50,000 fans on there! Her designs are all very intricate and feminine, and usually include beautiful pastel colours and frills. I love her cakes, but I never thought I would be able to create anything similar to hers. But at the cupcake class, I won exactly that!
Not only was I lucky enough to win a class I wouldn’t have been able to afford normally, but it was also her first class at her brand new Cake School! And this is only 25 minutes away from my home, in a town called St Neots, where I mentioned the amazing Cath Kidston Factory Shop is also located. So I was very lucky that I was the winner and that it was so nearby, and also that it was on Bank Holiday Friday so I had the day off work!
The Cake School was amazingly beautiful! I could see how hard Carina and her team had worked on making it a truly lovely place to be. It was in a concerted barn that had real exposed brickwork and wooden ceiling beams. She’s decorated one of the walls with gorgeous Pip Studio wallpaper, and the whole classroom was filled with stunning furniture and trinkets. It also had a little built in kitchen too! I loved the whole layout and setting, it’s exactly my style!
The class consisted of 6 of us being taught how to make the ‘Once Upon a Time’ collection by Carina. We each sat at the bench and were given all the equipment we needed for the day. I was a bit nervous because I’m a bit of a cake decorating beginner compared to Carina, and although I struggled with a few things (getting the icing to warm up in my hands!!) she kept her patience and offered extra help when we all needed it.
The class was really easy to follow, and I can’t believe the outcome of the cupcakes we made! I learnt so much too, and now I want to buy so many new tools so that I can make these at home! Or at least try to. I hope I can still remember all the tips she showed us! The class ran from 10am until about 5pm, which is quite a long day, but it went by so quickly! We also stopped for a little lunch break and Carina made us some yummy sandwiches. It was lovely to finally meet her, as I’d been following her on Facebook I think since the beginning of her adventure. Now she’s one of the most popular UK cake makers! Her cakes are so beautiful, she’s very talented, and a huge inspiration.

In the class we learnt how to recreate the romantic designs and cupcake story of the ‘Once Upon a Time’ Collection. This included a variety of wedding themed cupcakes, such as a brides dress, a Geisha couple, a garter, roses, bows, and pearls. I love this bird one we made with the ruffled edge. Carina taught us a really simple way of creating the frills, and I look forward to trying again at home and hope that I haven’t forgotten! The bird mould is a Katy Sue design, which is available to buy from Carinas website, along with all the other tools we used in the class.
I’m sure you can see from the photos that these cupcakes are pretty amazing, even if I say so myself! I had a really lovely fun day, and it was great to meet Carina and the other ladies in the class. The classroom was so homely and pretty I want to go back already! The class price was £150, and you can see a list of her other classes on her website. Thank you Carina!
