Homemade Carrot Cake (& of course more cupcakes!) ♥

Last week I had another go at making a carrot cake, as the one I made at the beginning of the year wasn’t a hige success! However I can say that this time, I was much more successful 🙂 I was even brave enough to make my own carrot decorations! Carrot cake is probably my favourite cake flavour as I love the slighty spiced taste, and the very creamy cheese frosting!
The recipe I used was from the Primrose Bakery book, but I altered the recipe a little to exclude raisins and use melted butter instead of corn oil. The recipe makes 2 8″ round sandwiches but I decided to use a 6″ tin to make the cake taller and have more depth. The cream cheese icing recipe was also from Primrose which was absolutely delicous. 
To make the carrot decorations I had to mix yellow and red gel colour together with fondant to make the orange, and then yellow and blue to make the green. I then just rolled the icing into sausages and flattened and shaped them. I gave the carrots a bit of detail with a cocktail stick too! They look pretty cute I think! I finished the cake off with a dusting of cinnamon. It was a very nice cake, although I think I might use half self raising flour in future to make it a little lighter!
 
 

I also tried out some new sprinkles on a few cupcakes 🙂 Pretty!

    My favourite at this time of year is ginger cake with cinnamon butter icing.
