Tangy Lemon Buttercream Cupcakes ♥

This week I made the most delicious lemon cupcakes! It all went a bit wrong when I accidentally used plain flour instead of self raising (doh!) so I had to start all over again. But I’m glad I didn’t give up as they were probably my favourite cupcakes that I’ve made. I love lemon, and I’ve always loved things a little bit tangy, so I put in lots of lemon zest and squeezed the juice into both the sponge and the buttercream. I also didn’t bake them for as long as usual so they weren’t very golden but they were extra soft and delicious!
I decorated them simply with traditional lemon buttercream swirls and topped them with lemon jelly sweets and silver and cream dragee balls. They were mighty good!
